Flourless Almond Butter Zucchini Bars

Ingredients
  

  • 1 cup drippy almond butter (I use homemade)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup coconut sugar (sub brown sugar)
  • 1 tsp vanilla
  • 1/2 cup dark chocolate chips
  • 1 cup zucchini, grated and squeezed of excess moisture

Method
 

  1. Preheat the oven to 350. Line an 8x8 baking pan with parchment paper.
  2. In a large bowl, mix together almond butter, egg, salt, baking soda, cinnamon, coconut sugar, and vanilla until well combined. Fold in chocolate chips and zucchini.
  3. Pour batter into pan and spread evenly. Bake for 30-35 minutes or until a toothpick comes out clean.
