Food for me is just as much a creative outlet as songwriting, writing stories, or painting a portrait.

Creating and tasting food can be such a sensual, incredible experience.

And as they say in one of my all time favorite food movies, The Hundred Foot Journey, “Food is memories.”

Fueling your body and mind with wholesome, healthy foods impacts every other area of your well being, including your ability to thrive in your creativity.

Since getting married a few years ago, I’ve made and tested literally hundreds of recipes and have landed on some REAL winners that are quick, delicious, and give you lots of leftovers to enjoy for lunch during the week.

Don’t just take my word for it- ask my sisters. We share recipes with each other all the time and these are some of everyone’s favorites!

Here are six of our favorite easy weeknight meals for you to test out and add to your repertoire!

The Best Chicken Tinga Tacos – Pinch of Yum (from The Minimalist Kitchen)

I simplify these INCREDIBLE tacos by making the sauce and then adding it along with the chicken to a crock pot. Cook it on low for 4-6 hours and then shred and devour when you’re ready to eat! So easy! We make these so often that I have this recipe memorized.

Roasted Sweet Potato, Wild Rice, and Arugula Salad – Pinch of Yum

I could eat this salad EVERY DAY! I switch out the cashews for toasted pumpkin seeds and add dried cherries or cranberries for a little sweetness. SO GOOD!

Comforting Chicken Noodle Soup – Sisters & Sage

This recipe is so easy and satisfying, and I love that we can enjoy the leftovers over a few days. I usually have all of the ingredients on hand in and it comes together in less than 30 minutes! Win win!

Hawaiian Chicken Kebabs – Cooking Classy

This is our go-to grill recipe in the spring and summer. There is NOTHING better than grilled pineapple, friends. NOTHING!
